Pumpkin Cupcakes

1.) Preheat your oven to 350 degrees.  Place your liners in the cupcakes tins and set them aside.

2.) Measure out all of your ingredients beforehand.  This ensures you won’t forget something and that you have every ingredient before you start combining.

Combine all of the dry ingredients into a bowl with a whisk: flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and allspice.  Place out of the way.

3.)Combine all wet ingredients. I like to start with the butter to make sure it is smooth and mixes well with the other ingredients.  Then add brown sugar, sugar, and eggs.

4.)Add the dry ingredients and the pumpkin puree.

5.)Place the batter in the cupcake tins evenly.  I use an ice cream scoop to keep them consistent and make it less messy.

6.) Bake for 20-25 minutes, check while baking by placing a toothpick in the center of a cupcake.  If it comes out clean it is done.

When they are cool enough to touch take them out of the pan, place them on a cooling rack.  Do not frost until completely cool.

 Pictured is a vanilla buttercream which I tinted a light orange.  You may use that recipe or a cinnamon cream cheese frosting.

You will need a stand mixer and orange food coloring for this recipe.

1.) Start with the butter and mix until it is whipped and smooth.  Slowly add the confectioner’s sugar.

2.) Add the milk, vanilla extract, and salt.

3.) Add the orange food color until the desired hue.

4.) Place in piping bag and pipe onto cupcakes.  Garnish with black sprinkles and candy of your choice.
